Our signature free-range Billion Agave Lamb Burger is the first of its kind in the world (as far as we know). The lambs are raised as part of the Billion Agave Project, where much of their nutrition comes from an innovative forage made from fermented agave leaves. This regenerative approach helps nourish healthy animals while restoring the land, conserving water, and creating resilient farms for the future.

But the burger is only the beginning.

Our café celebrates the abundance of our organic farm with a menu inspired by the seasons.
